La Brisaola, at it’s known in local shops in Valchiavenna to distinguish it from alternatives, has a long and illustrious history: as early as the 1400’s there are reports of the production of a “carne salada” or salted meat, whose very name originates from “brisa”, the highly-salted bovine gland.

And still today the very same artisan methods are adopted, age-old and secret, to best preserve the cuts of meat: salt, seasonings, mountain herbs and wine. A prodigious passion and love for a traditional product rich in flavours, and perfect for your daily dietary intake.

La Brisaola dei Crotti is CE Marked, GLUTEN AND LACTOSE FREE. 

 

It has received UNI EN ISO 9001:2008 certification, the IFS - International Food Standard and the BRC-GSFS Global Standard For Food Safety. 

 

It is included in the Handbook of the AIC – the Italian Celiac Association at the standard HLL 02 of the “Technical specification for the certification of Halal conformity to food products”.

#2 SALTING BY CRAFT MASTERS

We seek out the very finest cuts of Italian beef from animals reared in the wild.

Every part is sprinkled with a secret mixture of salt, pepper, mountain herbs and wine.
It is then massaged several times a day for an appropriate absorption of all the seasonings.

#3 MATURATION IN THE CROTTI

With the natural ventilation of the Crotti in Valchiavenna, courtesy of il Sorèl, the meat dries and matures taking on a burnished colour way beyond a typical development, synonymous with a unique, natural and quality product.

It presents itself to the nose with refined aromas, but with a decidedly soft and delicate consistency.

Strikingly red in colour, thanks to the meticulous maturation of between 4 and 7 weeks. Ideal for carpaccio, salads or indeed completely natural.

Exquisite harmonies of spices and natural flavours masterfully balanced. A lengthy seasoning (more than 8 weeks) delivers la Riserva a genuine product of “meditation”.
Suitable for accompanying mature cheeses on mixed platters, first courses or quite simply on its own.

With its unmistakable flavour and colour, thanks to its very particular smoking using pine wood, La Preziosa offers a highly-original taste experience.
